What's the difference between a Kansas City strip steak and a New York strip steak? At one time I thought it was how they were seasoned or cooked. Well, apparently I was wrong 8-) . According to info provided in a Kansas City Steak Co. Catalogue the strip steak was first introduced in Kansas City, Mo. on or about 1932 and was named after KC. While New York City restaurants wanted to serve the steaks, they did not want to offer them with the name of a Midwest city, so they named them "New York" strips. So, the realty is both are the same cut of beef - strip steak. Now one could argue about beef sources, but that is another issue.
Interestingly, my local butcher shop sells "New York" strips even though the shop is a good distance from NYC. To be correct, they should be labeled the generic "strip steak".
I think NY won and continues to win the PR battle w/ KC.

Except for the fact that the same steak in N.Y. will cost (at least) three times more than it would in K.C.
I'm no sure it makes a difference. When the waiter asks me "how would you like your steak?" I say "just wipe it's arse and cut the horns off". I have been to many restaurants where the chef has come out and said "when I heard that, I knew it was you". And they have always cooked a damned good steak just the way I like it.
I like my steak cooked so that ,if given 2 aspirins, it has a 50 per cent chance of recovering.
