Since my camera shoots FX and DX but I choose for some reason to shoot DX instead of FX say because of a lens does the quality of the photo degrade with the downsize of the pixels. My camera D750. Or explain exactly what happens.

Someone provided a link to this video a couple of weeks ago. Not everyone thought Tony was correct in his conclusions. I have a D750, and I always use FX lenses. Fo my DX bodies, I shoot mostly FX lenses, too.

I think the main reason for FX cameras to shoot in both FX and DX is in case some one has a DX lens that they want to use on a FX body. If you go in to the Menu, select Shooting Menu, scroll down to Image Area and select. There you can manually select FX or DX. You can also turn on Auto DX Crop. With Auto DX Crop turned on, when the camera senses a DX lens it will automatically with to DX Image area.

It's primarily a courtesy feature from Nikon to allow you to use their crop sensor lenses on their full frame bodies. Canon users do not enjoy that capability.

If you are using a FX lens the image quality will be the same until you enlarge or crop to the extreme. It just like cropping.

The frame rate, buffer, and storage capacity will increase. See your manual for details.

Your 24 mp camera becomes a 10.3 mp camera. Similar to a D200. The answers to the rest of your question should be apparent.

But does the lens "extension" multiplier work that DX "features"?

Take your DX lens and multiply by 1.5
Then go RENT a lens that is close to the result.

On a tripod, shoot your DX lens in DX mode, then swap to the FX lens and shoot the same composition in FX mode.
(if your lens is a zoom be sure to make the "crop" adjustment between DX & FX ie: if you shoot 50mm in DX shoot 75mm in FX... etc.)

Compare the results. Form your own conclusion.
