Which one do you prefer?

The first one. I prefer the "fluffiness" factor as well as the composition/crop. I am a sucker for filling the frame whether it is done in camera by zooming in on the subject or by cropping in post.

Both! ... and both are excellent.
I've taken 200+ shots of the same bird (as long as it will tolerate me) doing what birds do on many occasions. They spend half their lives on feather maintenance and the rest on feeding, resting, etc. Capturing it all is part of the reason we photograph them, isn't it?
Both well done. My preference would be for Fluffy as I love the white on dark background.

question
having shot many snowy egrets I have never seen one with the red at the end of the beak near the eye. always a black beak with yellow. I googled snowy egrets and all the pics I saw show black with yellow around the eye. I wonder if you found something unique or have you seen this before?

Both beautiful shots - I prefer the fluffy one. I have never seen a snowy egret with red at the end of the bill, they are normally yellow

I agree with the red v. yellow lores so I looked through my Snowy shots and found a significant number that look like those posted by the OP and some that had small spots of red on the normally yellow areas.
I think expert birders might be able to explain this but I think the birds can "blush", meaning they can, under the right circumstance, force extra blood into the area of skin and make it look red. Or ... its a breeding color. I think I've seen reddish feet on them too.
