I prefer No. 2. However, the best improvement would have to have been done at the time of making the exposure.

I like the second one. Removing the sky makes all the difference.
Number 2. No light blowouts.
I think you are between a rock and a hard place. I find the "rock" that you added to be claustrophobic, so to speak. In addition the plants are too bright. Also there is a slab in the upper left corner that is a little too bright.
Have you considered an attempt at using pseudo-HDR? Alternatively could you replace the rock with a blue sky?
My first digital camera had a very short dynamic range. Consequently many of my pictures had blown skies. Using PSE 5, the only pp software available to me at the time. I had to substitute the blown skies with blue skies that I had recorded. Also Inwould duplicate the image and adjust its brightness and then remove the same spot in the original layer.
I sincerely welcome your response to my suggestions.
Finally, the waterfall is dramatic so I would not give up on it.
