I would check with that company or the ship captain for the best answers. Some of the stuff on the ships will be trademarked.

Check to see if the passengers, by virtue of their ticket, assign any and all rights to their visage and or person being used in promotional or other photography by the Cruise line. Like you do when you buy a ticket to a sporting event. This is so the director doesn't have to chase you down and get a model release when they show you on National TV stuffing a chili dog down your pie hole. If the passengers haven't 'signed away' their privacy rights, you'd need a model release from any of them you shoot, I think.

2) Don't lean too far over the rail.
3) Don't stand behind the Captain and say 'gee, is that an iceberg dead ahead?"

Try not to use flash on board..
Take a f2.8 P&S or lens for inboard shooting..
Most everybody on board uses a small compact or camera phone..
I have been on many cruises and have photos, let me
know if you would like to see them..

Ask permission before shooting any bevy beauties or anyone else for that manner. Releases usually only apply if you are going to do commercial, but politeness always applies. Everybody is taking shots of the ship etc so no problems. Taking pictures of shows is usually prohibited. Shots ashore are usually more interesting than the ones on the ship. As long as you are courteous you should not have any problems.

I've taken gazillions of photos on various cruises and shore excursions (Caribbean, Alaska, Hawaii, South America, Mexico, Australia, etc.) and have never had problems. I would however, be careful on nude or clothing-optional beaches. That's a whole-nuther thing.

Cruise lines offer passengers a video of their cruise, so there is probably something in the ticket contract about that. Of course, passengers taking pictures of other passengers is a different story.
