Canon body, let's say.... Willing to go up to the Canon 7D Mark III, but I think that could be over kill for me.
Wildlife... Night sky... Action... Macro... Mountains... Waterfalls... And occasionally my family!

Maybe not, because you probably got about 5 years to save up for that one (that's probably how long it takes for that one to appear on the market).
No really, I think you meant the 7D MII. That is the newest model (just releast). You are right in one aspect, that is a great camera for action! For all the other uses you mentioned, just about any camera body would do a good job, it is the lenses that will be the deciding factor.
Ok so around $3,000. price tag. If you include lenses this can go easily into the 5k as lenses (god ones that is) are expensive...
I am using Nikons so Canon is not my forte. 'SS' and 'MT' will likely see this and give informed advice on what to get.

I have started photography school and own a Nikon 7100. It seems to be a good camera. Is it better than Canon?

Easy answer- dollar for dollar no/yes. Also it depends which lens is attached to the body. A bad lens will make any camera lousy.

The absolute best buy in a Canon body today? No question, the 6D at $1699 right now. Even a better deal in the kit with the 24-105mm F4L lens at $2299.

As a complete oversimplification but still slightly true, the 70D has better autofocus for video and the D7100 produces slightly better still images.

If you put your price between $1000 and the 7D Mark II, you really only have choices for
new cameras: 70D, 7D Mark II, and 6D. For older cameras, the 5D Mark II and 7D come into the picture.
If you aren't tied to Canon, other cameras in the same range include
* Nikon D7100, D610
* Sony A77 II, A7
* Fuji X-T1
* Olympus E-M1
* Panasonic GH4
Now, what matters to you?
1. video? (4K, hybrid AF)
2. full frame? (larger, better high ISO performance)
3. mirrorless? (lighter within each sensor size category)
4. still photo image quality

What do you shoot mostly?
Portraits, scenics, still life's? Then a 6D would work.
Sports or wildlife action? Then the new 7D II would be the way to go.
Feel free to check my wildlife photo blog where virtually every image was taken using the current 7D so you can see what that camera can do.

I love photography and would like to become semi-pro instead of where I am right now.
I don't want anything with a HUGE learning curve. :-/ I have quite a bit of current knowledge and an intuitively good "eye." (The other eye, how you say, not so much!)
I bought a Nikon D7100 and took it to Yellowstone, but I still have daydreams of my Canon past and think maybe I just need to get a Canon to satisfy the itch, so to speak.
So... That's where I sit.
I'm looking for great clean still shots, pretty decent video. Probably not shooting for the next national geographic movie. (Darn!)
I shoot Wildlife. Scenery. Mountain tops. Informal people shots, not real portraiture. Some Action. And a reasonable learning curve.
Which leads me to -- should I keep the Nikon D7100 or satisfy my Canon hankering? And, if so... Which one?
