Some people like to stop the wings and some want that blur. To stop I would use around 1/2000 - give or take. Depending on your equipment use an ISO between 400 and 800. I can use 800 easily with my full frame sensored Canon. Probably the most critical is shutter speed then go with aperture and ISO from there.
