Your first and third shots are under exposed, check your meter and if your camera shows a histogram look at it for a full exposure range from right to left.
these pictures show a falloff in the highlights, the right side of the histogram. My guess is the meter was reading light colored sand and that is why you got a under exposure, snow will do the same thing. The middle shot is spot on for exposure but I would have composed the photo differently by not placing the main subject in the middle of the frame. Try cropping into the photo moving her to the right and having less sky. If I could attach samples I could show you what I I have in mind.
