I would like to know which digital camera and lens you recommend for a Newbie. I want to be able to take close pictures of birds and wildlife.

Deb, welcome to the Hog.
Depending on your budget, I would recommend an appropriate Canon Rebel Camera kit, and a separate tele for birds. Or a used(not new)Canon 7d, if your budget allows it. You can of course spend much more.
Again, welcome. ;-)

Welcome to UHH. I would recommend a Nikon D7100. Google it for reviews. It's one of the very best cameras available today. The telephoto lens will depend on your budget. You might look to B&H Photo or your local camera store for pricing. Good luck and welcome again.

I looked at you post and wondered how many responses over a hundred you are going to get and left it at that. Then I ran across this. worth a look see.

When he says he let the camera do its thing, he means he had it set on auto. The camera set everything. Not too bad

I'll throw my 2 cents and suggest Sony's Alpha DSLR series. The best advice I can give is take a look at Sam's Club, Costco, or a local camera shop and handle bodies of all the major brands. Buy the 1 that feels best. You can't go wrong with almost any of them as long as it's within your budget. If you want to save a little money, check http://www.bhphotovideo.com/ or http://www.adorama.com/ in their used (or new) departments. They both have very good reputations.

Yes, but that is NOT a good comparison, as Winter's cameras all have special magical properties. For example, he shoots with a Nikon, and they produce as vivid colors as do Canons! NO WAY your Nikon would ever do that.
Winter knows camera Voodo. And if he was to loan you one of his cameras and you actually used it, you would for sure, find yourself cooling your heels, at least every other week in Hog Heaven!!
I am of course, not kidding!!

Are you willing to lug around a full size dslr? If not...look into mirrorless or bridge cameras.

Once you think you have picked the camera that you want, it helps to actually get one on your hands to see how it feels to you.

I had narrowed my search down to three models and picked the one that felt more natural to me.

BTW, I spent three years before I found the one I wanted.

Starting into photography it is IMO best to KIS, keep it simple. Buy a high quality pocket camera such as the Sony SX50 so that the camera is there 24/7 ready to shoot. This familiarize the newbie with speed, f, iso AND MOST IMPORTANT COMPOSITION.

Software, PSE or PSP-X6 and some basic Topaz adjunct programs such as detail and Clarity.

Starting with high-end equipment is the Millstone around the neck... too much to fool with. Later for special situations sure buy the more "professional" looking DSLR.
