Would love to hear any suggestions for things to photograph around Las Vegas other than the strip itself. I already have plans to go to Red Rock Canyon, Valley of Fire and Eldorado Canyon Mine. Anything else you might know of that I am missing? Don't really want to range out as far as the Grand Canyon this trip, so am looking a bit more local. Thank you for any suggestions.

Hoover dam. Also visit Lake Las Vegas and take in all the wasted water.
Hoover Dam lies not that far from Las Vegas. Take the tour of the dam, too.
I have been there as well as the Valley of Fire and Red Rock Canyon NCA. Both of these venues will give you a boatload of photo opportunities, even if you stay on the scene drive.
Downtown Las Vegas has been renovated, and offers some interesting neon displays, in addition to the iconic casinos.

Thanks banjonut and anotherview. Hoover Dam is on my list. I did not know they had reopened it for tours. I also like the idea of hitting Freemont Street whenever I am in town. Love the shot of the cowboy.
I took a helicopter tour out of the Boulder City airport (via free shuttle ride from the strip). There are many options available on which type of tour you can see. LV at night, Grand Canyon etc. Lots of photo ops there!

What about the new bridge over Hoover? Just a thought.
I too love neon, a form of artwork, IMHO. Herewith a second neon shot from Fremont Street, Downtown Las Vegas.

At night, go to the top of the Stratosphere and you can get some great areal shots of LV. A lens with some type of image stabilization is a big help here. Also you can go to the top of the Eiffel tower and get the Bellagio fountains from above.
Fremont Street Experience (downtown L.V.) is old Las Vegas and very interesting. Also "neon grave yard" on Las Vegas Blvd North, which is where old neon signs from the Strip have been housed. You can tour this at night as well. Photo's ok. Finally, new Mob Museum on Stewart (which is part of the down town experience) is the first Federal Court House and has been preserved -- It has plenty of photograph opportunities. Tour is very much worth the price! You can buy your loaded dice and take that home too! Enjoy!
Neon cowboy is Vegas Vic. He used to be on Fremont Street and his arm would wave; he also had a voice that said "Howdy Podner". Voice is now gone. Not sure if the arm waves but his neon is preserved. Old Silver Slipper that used to rotate on top of the Silver Slipper Hotel is outside the Neon Graveyard. It still is lit up at night and is beautiful. Not sure if it still rotates.

Go to Youtube. Search for Don Landis and look at his travels, both 3D video and non-3d. You will get ideas on what to look for in and around Vegas. P.S. He is a retire professional and his works are super. If you have 3D TV, you will love to see his works on a 3D TV.
Another photo spot -- the new "High Roller" which looks like a Ferris Wheel -- beautiful when lit up at night. It is like the "Eye" in London but is slightly bigger. Made up of pods that you can board if you want. Not sure if the view up there is any better than other locations in L.V. LVCVA (Las Vegas Convention Visitors Authority) published a beautiful photo when this recently opened for business. I think you can find it on line.
