Believe it or not, I don't use photoshop. However, am thinking of taking a course so I can at least get started. Would Elements serve me just as well as a beginner? Also, I use a Mac so need a Mac friendly version. Your thoughts, and thanks in advance.

For a beginner Elements will be great. If all you are doing is photography you don't need PS, Lightroom 5 would actually be great or a favorite of mine is onOne PhotoSuite 8 is more robust than LR. you can try onOne free for a month. Post processing is the other half of making a great photograph.

Elements was recommended to me in the winter and I was able to buy on sale at Costco. I love it! It does a huge amount of stuff, and everything is easy to find, but tucked away when you don't need, so the interface (?) is clean and neat.

There are 3 basic tabs of editing options: quick, guided, expert. Very handy!

You can do layers and edit raw files, and many other more "advanced" things that basic programs might not offer.

Do you use iPhoto now? If so the jump to elements is not a big one. In fact if you haven't tried iPhoto that is where I would start.

Adobe took the BEST part of Photoshop and put into Elements for a affordable price for Most people.
So YES it would be a great place to start. Photoshop is for those that are much more advance then Elements.

Until the end of this month, Photoshop and Lightroom together are available for $10/mo - Photoshop Elements is ok, but it has limitiations. PSCC has no such limitations. If you are just going to dabble, then either will be fine. If you want a program that you can grow into as your skill and expectations increase, then Photoshop CC is the way to go. Lightroom should be a strong consideration regardless of which you end up with. It will keep you organized and make simple image editing a breeze, and it does a wonderful job with raw files (as do Elements and CC). but in a much more efficient user interface.

If you've never been involved with any form of Photoshop, Elements will take a bit of 'getting into', but you will find it will probably satisfy all your needs. Unless you are into 'professional' post processing, I'd venture a guess that Elements will do everything (and beyond) what you may want to do. There are many helpful videos on the web showing each individual step in Elements. I actually switched from full blown Photoshop to Elements because I refuse to 'rent' their program. In over two years, I haven't found a thing I can't do in Elements that I used to do in Photoshop.

I have used elements only for about 10 years. It supplies all the bells and whistles that I need.

Yes Photoshop Elements should serve you very well in the beginning and it may be all you'll ever need (depends on what your needs are at a later point). Elements is a very powerful program! Photoshop has a full array or things that Elements can't do, but those are things that most people don't need anyway.

May is photo month at Sam's Club, PSE 12 is on sale for 69.98. And you get the Mac and PC versions on the same disk. Available in store and on line. While walmart has LR5 for $79 in the student/educators edition (also Mac&PC). The two work extremely well together.
