In the days when we made the prickly pear cactus fruits into a syrup to put on ice cream my kids were too young to say prickly pear easily. From then on it was known as pickleberry jam.
It has a wonderful raspberry'ish flavour. If you try to get your own fruit and make some yourself I highly recomend playing a blow torch over them to remove all the fine spines. (Do this at your own risk - outside on the driveway is my preference.)

The dark red fruit were the most flavourful in our opinion. They have little or no pectin and you will need to add some to get it to gel.
We generally didn't add pectin since we used it mainly as a topper for vanilla ice cream.
