some non-AI lenses won't fit the DSLRs because the aperture ring hangs over the back of the lens but they can be modified to fit or the ring can be replaced with the factory AI conversion ring when they are available.

I have a couple of old non AI lenses and had them converted for $35 each at http://aiconversions.com/

Got them back promptly and they work well.

Don't mount a non-Ai (actually the correct terminology is Pre-Ai) Nikkor that hasn't been modified to the D7000. It can damage the Ai follower tab. Break that & the camera cannot meter properly... Many 3rd party Pre-Ai lenses can work without the modification as their aperture skirts are flush with the lens mount face. Be careful though. If a 3rd party Pre-Ai lens binds at all when attempting to mount it, stop & go no further. I moderate a group on Flickr where we use non metering lenses (manual focus lenses) on Nikon's base to prosumer model DSLR's & this issue has been covered extensively...

Thanks Scott - seems it may be easier to use the pre-AI lenses on Canon digital with adapter .....

Here's a link you can use to see which lenses will fit your D7000.
In short, you cannot use non-AI lenses on a D7000.

You can if they have been Ai modified (Nikon did this free of charge years ago. It involves changing out the aperture ring. Most of the replacement rings are now long gone although a few crop up once in awhile. Pacific Rim camera has a limited supply for a few select lenses. That said, a component person with a good mill can redo the old ring. Lot's of "hack" jobs out there done with Dremel tools too...
