This is a picture of my great granddaughter. I had her pose about 5 feet in front of a white sheet. I know the sheet shows up gray, so my white balance must be off. How do I fix it?

Your white balance is not necessarily off.
The white sheet is darker because you have used a flash on her , and the white sheet has less light on it.
Pure grey from white means no cast.
If the grey has a slight green cast, which it may have, then you do have a white balance problem.
What post processing program are you using?

I would say the exposure and white balance are very good.

If you took a picture of just the white sheet, using only automatic exposure, the camera would give you a gray picture. The camera's meter is not designed to expose white and black correctly, it's designed to get "middle" colors right, especially medium gray. So when it sees a white sheet, it will expose to make that gray.

But that's not what is going on here, this is all about exposing your great granddaughter correctly, and it did that.

I agree with the others, the exposure looks correct, and the White Balance does seem to be correct.

The only adjustment that I 'might' make is to increase saturation just a tiny bit.

Also, this background would be very easy to eliminate for pasting in something else. Could show a sample if you are interested.

Ahhh, the trials and tribulations of portrait lighting.
If you get far enough away from the background with no light in it, it will eventually turn black. That's the only way to get black, to be black.
If you want it to be white, you need to iluminate it.
If you want it pure white, you have to blow it out.
In saturation, always adjust for the skin color. We don't know the color of anything in that photo, but we always know correct skin when we see it.
To me, she is a little too red. I'm just guessing, but because of the freckles, she is probably pasty white?

Guys, let's consider the context. The OP is using the Kodak EasyShare Z8612 IS camera, a bridge camera which does not save in raw format. There is no custom white balance, just auto and 4 presets. It does have exposure compensation and flash exposure compensation, so the fill balance can be adjusted a little. Any post processing would have to be done to an 8mp jpeg.

And an 8mp jpeg is plenty to work with!! That is more than the early 'fancy' digital cameras had!!
