I'd appreciate recommendations on stitching software that can handle my D7100 NEF files? I tried searching here but didn't see anything directly on point.

No doubt some-one will correct me, but I believe you have to convert to Jpeg first.
Was hoping that wasn't the case (or convert to TIFF, etc.).

You cant pano-merge NEF files until you convert them to JPG/TIFF/PNG.
I have found Photo Shop to do the best job, have tried several others, Photo Shop has a blending feature after they have been stitched, that makes all one, instead of discrimination shades between the photos. JM2Cents.

Photo Shop does a brilliant job make sure you expose in manual or you get varying exposures and you can see the joins, see my pano of Namibian wild horses all hand held, its easy and great fun
I use the The Photomerge Panorama option in PS Elements 11. It works well with NEF, TIFF and JPEG files.
Pefect - seems I'd be better off working straight from NEF files I'd think.

I THINK PTGui will do raw files including NEF's but check their site first.
A free yet very powerful and accurate software is from Microsoft: ICE. It uses RAW format NEF CR#, if you have the CODECS installed.
It saves in many formats that can then be edited if necessary.
I am currently uploading one (re)made exclusively with MS Products.

Photoshop and PSE can do it to NEF files.

You might try Hugin Panorama Creator to see if it fits your needs. It is Open Source and free, as in no money required.

Below is a short example of using three RAW files to merge into a "panorama" view. Software referred to is Adobe Camera RAW and Photoshop CS3.
An example of my output from doing this can be found at
http://www.uglyhedgehog.com/t-145926-1.html#2464134 All the shots should be the same exposure and white balance (sometimes I forget), but "Manual" is best to get all the same.
Then, for the computer part...
If I want to merge RAW files instead of using the JPEGs, then I open one RAW file from the series in Adobe Camera RAW and make desired adjustments. I don't need to do a SAVE because the sidecar file (.xmp) containing those corrections will now exist w/o SAVE. I now make duplicate sidecar files (.xmp) with names to match the other files to be merged -- that way the corrections for all the RAW files (.NEF) will be the same. The files list for these three were: (Note -- The .NEF and .xmp file extensions are names resulting from my Nikon camera's files and using ACR)
_DAR4601.NEF _DAR4601.xmp
_DAR4602.NEF _DAR4602.xmp
_DAR4603.NEF _DAR4603.xmp
Then in Photoshop I start the Photomerge procedure and browse to
select the the three RAW files for merging. Final touch-up and cropping to a rectangle is done in Photoshop to finish the "panorama."
