I would like to know what gear most folks who have been doing this for a while take when going out of town.

I drive and do not fly. Driving gives me the ability to take everything--tripods, monopods, and both backpacks. While I take everything, I use Lowpro sling bag for hikes so I can take 2-3 lens and at least one DSLR.

Im not a pro...but I have been doing this for a while.
On my first trip cross country 30 years ago, I took a film Vivitar, off camera flash, 50mm lens, 2x multiplyer, and telephoto lens and some filters all in one bag, not to mention film and those silvery bags to protect it from the xray machines. Today I travel with a point and shoot olympus http://www.dpreview.com/news/2009/1/7/olympussp590uz an extra card 2 sets of batteries, a charger and a cable (my hubby brings a laptop). If I go far out of the country I also carry a converter to plug in the charger. I can get everything I want from this camera and it doesnt weigh me down or draw any unwanted attention. With IS I can hand hold it at fairly low speeds. good luck and safe travels.

It really depends on my destination & means of travel. Obviously, I couldn't drive to Italy. Going there, I took my D300, 10-20mm, & 16-85 with plenty of memory, extra battery, charger, adapter/converter so that I could recharge my batteries. When driving, I take everything: all of the above, + focusing rail, tripod, flash units, extra batteries.

The best camera is the one that is with you... You've probably heard that one before, but it's so true. Regardless whether I pack my DSLR, I always carry my Canon S95 (point and shoot) on my hip. Don't underestimate the value of having a camera at your hip at all times.

I think it really depends on what your planning on shooting. Over all if I'm going out of country I take my Nikon D90 with a 18mm-200mm lens and a tripod. If I stay in the US I use my Nikon D700 with a bunch of lens & tripod. Check out my travel pics at Smugmug, type in robeng.

At home I use a Nikon D700 with a bushel of lenses and a trunk full of accessories.. At age 83 I don't drag that off the reservation. I carry the little sister to the D700, the P7000 with an SB 900 flash and a tiny radio remote.

My laptop has all the manuals and favorite tutorial links.
None of this goes in checked baggage!

I recently travelled to Europe for 2 weeks, hitting 3 countries and doing all my travelling by Air. Before I went, I bought a PacSafe Shoulder Camera Bag which holds my D7000, SB600 flash, 17-55mm lens, 105mm lens, and 35mm lens. It also has room for manuals, my SD Cards (I carry many and change them each day), and all my filters. I also purchased a Feisol carbon fiber tripod which only weights about 3 pounds and is small enough to fit in my large suitcase with my clothes. I purchased a Digital Foci 8 inch photo book to review my work each day. It will read all types of files, including raw. The only bag-checking I did was when I was forced to gate-check, which I think only happened once. Two bags, two weeks. It worked well for this 70 year old.

Photo equipment wise-- just my Panasonic Lumix FZ35...
UNLESS I plan on actual photo shoots when going-- then I add my Canon and gear bag.

My last vacation was a small group tour of Vietnam and part of Thailand. I carried both my cameras with a CameraSlingers strap, one camera on each hip.
Nikon D700 with 17-35 2.8 lens
Nikon D300 with 70-200 2.8 lens

In my pockets were extra memory cards and spare batteries. On the airplane I carried my equipment in a ThinkTank Airport Ultralight backpack loaded with chargers, SB900 flash, Canon S3iS backup camera, GPS device, 2 Pro Camera rain covers, polarizer, foreign plug adapters, etc.

On my next trip (to Berlin and Prague) I may experiment with buying a Nikon 24-120 f4 lens, putting it on the D700 and just taking that with the Canon as backup. This is just to avoid being robbed. However, when I go to Burma next year, I will use the two camera outfit. My main interest is in candid street photography and, yes, I am one of those bad people photographers who typically stand off at a distance and sneak my shots with a long lens. My bad.
