Help in sync of Canon 50D & 580EX

I'm trying to set my camera & flash to stop action in hummingbird shots. I've tried setting the camera manually with a speed of 1/500 or higher and having the flash at ETTL but the camera seems to have a mind of its own and sets its own speed.
Can anyone offer any suggestions? I've attached a shot from last year of a hummer at a feeder - not bad on the body but wings are a blur. I've observed the little guys at some real flowers and anxious to get some good clear shots.

Well of course, the camera to flash cannot be synchronized at speeds greater than 1/200 sec.

The camera shutter is not fast enough to stop the wings.
People I know who shot hummingbirds use 4 or 5 flashes.

Try High Speed Sync (HSS) on the 580

According to an article on hummers wing speed can be from 12 to 80 beats per second. Shouldn't 1/200 be able to stop the action???

In High Speed Sync (HSS) mode the flash actually has a longer effective duration and would blur the wings even more.
The key is to use the lowest possible flash power.
That keeps the duration shorter.

Check page 107 in your manual.

Another option for faster shutter speed is to use continuous lighting and not strobe.
