We're flying to Maui (staying in Kehei) for 13 days (10 actual days on the island)...I'm taking my Canon 5DIII, lenses all Canon (17-40L, 24-105L, 100L macro, 100-400L), chargers/batteries/cards/clean underwear, blah blah blah.
My question is....anyone who's been there or lives there, are there any special spots/shots/views I should try to find outside the normal tourist realm? Also, ya think I should take my infrared converted Canon 50D?
Never been out of the states,.....thanks for any help.. :-)

Put a visit to "Whaler's Village" on your to do list
There are so many it makes my head spin. I'm sure there will be lots of suggestions but one n particular I would like to put forth is Upcountry Maui. There are some great roads through country like scenes. There is a great little town, Makawao and Kula. (Famous veggies) if you get up n the main road that goes along Haleakala you will hit a winery. Beautiful grounds. Don't forget to see a sunrise at the summit of Haleakala. Breath taking if you hit the right weather.
Most cling to the beaches or areas close t them. I like those too but Upcountry Maui has become my favorite place to explore, photograph,etc. Another off the beach area is the Iao Needle. Depending on the cloud cover it can be a great spot for pics.
When I stayed in Kehei many years ago, I also had a film camera that I shot infrared b&w exclusively. Well worth the trouble as the resulting photos were a whole different look at Maui.
You will see textures and contrasts you will not believe.
Also took many pictures of the sunrise over clouds from the top of Haleakala. Bring a warmish jacket and some sort of safety goggle/ glasses as the wind is biting and full of particles. Spectacular views well worth it.
Also insect repellant... I was a human pincushion the first time I went, biting flies, etc.

And go to the top floor of the Sheraton at Black Rock, just up the beach from Whaler's Village.
It doesn't really matter what gear or how many lenses you take: you can't shoot everything, and there is so much beauty that any gear combo will bring back fantastic shots. My advice is to travel light and put down the camera often, so you can see Maui full-size, not just through a viewfinder. Drink in the experience (and maybe a few Mai Tais, too).

Haleakala at sunrise is breath taking! We have gone up there twice to see the sun rise, the stars you will see are like none other then the sun rises and you find yourself in awe once again. Whatever you do and where ever you go in Maui, relax and enjoy!
just make sure you bring lots of money with you...........THIS AND ALL THE OTHER ISLANDS ARE VERY,VERY EXPENSIVE.....recommend Puerto Rico..its cheaper and more beautiful
just keep away from Oahu....this place is packed like sardines
strongly disagree with you saying puerto rico is more beautiful than Hawaii. Been to both many times and there is no comparison. Don't make yourself miserable trying to get a million perfect pictures. Virtually anything you photograph will be "Hawaii." Just explore, take some pictures, and enjoy your stay.
You're lucky to be leaving from the west coast.

Whoa! You are lugging a lot of gear. Is this trip a commercial paying assignment or a vacation?
If it's a vacation I would just take a point and shoot and mostly relax and enjoy myself.

I was just there in June and had a great time. Unless you have something specific in mind......I would not waste time with the 100-400. Awful big and heavy for travel IMHO. The only thing it may be good for is capturing the "beached whales" on Little Beach (nude beach).
I took my 5Dmkii, 17-40, 24-70 and 70-200 and didn't have need for anything longer. I also had my new GoPro for snorkeling.
My favorite shots were with my 17-40 and ND400. This link is for one of my favorite shots of La Perouse Bay.
