Simular problem. Due to fact I often forget to reset the date time stamp on my Pentax when I put the batteries back in and it defaults to made date and 12:00, is there any way to edit that and put in the correct info so it reads correct instead of being off a few years?

As others have mentioned, Cloning is your best bet to remove the date from your photo. Both Gimp and Paint.net are free downloads that have a clone tool. They are both effective, but I find that Paint.net (not to be cinfused with Paint that is included in Windows Accessories) is the easier one to learn to use.
