I have a Nikon D-300 and have shot some bracketing pictures. I can now only shoot 2 different shots instead of mutiple ones. Does anyone have any idea where I can find the place in my menu to correct this to either 3,4 or 5 frames?

no clue - read the manual or learn to bracket manually?

Click on the Google link https://www.google.com/search?q=How+to+set-up+HDR+bracketing+for+nikon+d300&ie=utf-8&oe=utf-8&aq=t&rls=org.mozilla:en-US:official&client=firefox-a , and this will provide you with enough info to set-up your HDR bracketing. If you need more help, let me know. I have a Nikon D300 and capture HDR images using bracketing all the time. Arnold

Press BKT button and look at top display and rotate dial to the number of shots you want to take, set camera to CL or CH and use a TRIPOD

I tried that and it only let me rotate it to 2. Would like to at least get 3.

NIK software has a wonderful HRD plug-in for single images. Worth every penny. The Complete Collection is also amazing... giving you complete control over every part of your image, from noise, general tweaking, HDR, and a terrific black and white plug in. It's expensive, but worth every penny. Attached is a seascape where I used NIKs HDR plug-in.
