I have tried the 50mm reversed and got the 1:1 but very shallow DOF
can I expect and get better DOF with this quality nifty fifty canon glass and tubes?
Depth of Field is directly related to aperture, even reversed. With either a BR-4 ring or a BR-6 ring, I can control the aperture on a reversed Nikkor lens, so I can focus & compose wide-open, then close-down (via cable-release) for image capture.
Auto-extension tubes will allow you to focus & compose wide-open, then automatically close-down for image capture.
Nikon BR-4 & BR-6 rings

I understand the DOF with normal lens use - I am just wondering if I can expect the same with long exposures at f14 and up with the tubes.

Here's the fall back with Macro.. The closer you get/working distance/ the shallower the DOF. One reason its important to pay special attention to focal plane. If the subject is flat to the lens, then the DOF seems greater as more of subject is in focus. Take a look at some of the better shooters here and you will see many of the subjects are nice and square with the lens. But you cannot always square subject to lens. This is the reason I took up focus-stacking, as my higher magnification shots were just too shallow depth of field.
