I don't know if it is generally known how to get the Virtual Horizon to show up in the viewfinder in the D7000
Go to custom settings in menu
F- controls
F3 assign button. I assigned the FN button for this.
Highlight virtual horizon and press OK
At the bottom of the viewfinder the light meter shows over and under exposure. If you press the button you assigned on the camera and the meter will change to the virtual horizon mode. It will look the same as the exposure looked but if you tilt your camera down left or right you will see the effect on the meter at the bottom of your viewfinder. The Virtual Horizon will stay active until you take a picture or your meter times out.

Bubble levels are nice (I use one) but hard to see when using the viewfinder. I think the best solution is a viewfinder based horizon (e.g., a gridded focus screen or some other superimposed line) and a bubble level or two on your tripod. I even glued a bubble out of a picture-hanging kit from WalMart on the ledge of my battery grip, so I can get level with the camera itself, when propped on a fencepost or other support. Just gotta make sure your grip is level when you glue it on.
The D7000 has a gridlines option that should solve your problem.

I saw a virtual horizon on a (Sony?) I played with for a few minutes at my local overpriced camera store a month or so ago. Reminded me of an artificial horizon on the planes I used to fly for fun (those many years ago when I could once afford to). I'm not sure if I liked it of if I was depressed at how unsteady I was trying to keep it level. I eventually want to upgrade my (camera) body, but can't afford to...I like my new Tamron lens though.
My Pentax shows the virtual horizon both in the view finder and live view. Sometimes it comes in handy.
