In astronomy movies are made of asteroids and other things and a quick introduction to the method is found in Iris tutorials that may be worth your looking at for ideas...

Very nice eclipse time lapse image!!! On your question, I think a "star stacking" program usually will stack planet images or probably the moon so it might be worth looking into one. These wouldn't have any star images on them usually.
