I have seen several spectacular photos of back lite very spiny cactus in the Arizona desert Sun low behind them incredibly beautiful
Any good camera will do fine it is lens you need to look at. Look for a good tilt shift, and or wide angle

Focus stacking is done by adjusting the distance you focus on.not by adjusting aperture. Changing aperture will adjust depth of field but not focus distance
I booked a Navaho guided photography tour of Antelope and a few other local slot canyons.
antelope was the best (just but way too busy yes we could set up tripods but you had a constant background of visitors walking past ruining the photos and atmosphere. Rattle snake was very close to antelope canyon and gave me my best photographs

London, too many to mention, but try mot to miss South Bank walk along the side of the Thames to Houses of Parliment, go up the Shard, visit the Tower of London (pity the poppies have gone) London Bridge, every where you turn there is an interesting old building museum or church Oxford is closer to Cotswolds (and its chocolate box villages) and Bath so miss out on Cambridge to far away. Have a great visit
I think it will be fine just do not extend the center pole, use a remote release and mirror up with live view where possible. place a weight hanging from the top of the tripod. All things you should do with a Gitzo or RRS real expensive heavy tripod

happy friendly people 3 years ago scenery spectacular you must visit Halong bay and Sapa for the rice fields choose time of year carefully or you could hit constant raain or like we did very high humidity .
We felt perfectly safe unless crossing a road in Hanoi not my favorite city.
No one objected to me taking photos (I did ask) and I felt safe lugging around a nikon d800 and 24-70 2.8 lens a noticeable set up.
I dumped my HP pro printer well over £100 to replace the ink carts
junk, no test at all a waste of time
look at the second hand price , Nikon lens hold there value so well old pre aauto focus lenses are still worth big money then compare to secondf hand 3rd party lenses, practically worthless
