I am a Nikon man but lets be fair there is little difference quality wise between Canon and Nikon Get both cameras in your hands and see which has the best handling for you and suits you best.
PS tyhis is bound to be followed up by all and sundry trying to persuade you to purchase the brand they purchased , so loads of fuji, panasonic, Leicas etc etc etc to follow

This is the way to do it, adjusting exposure will just make the interior too dark! would go 5 shot and blend in HDR realisticaly

No way, lost too much in the past, and had too much damaged , not much of a choice, stolen or broken is it . Not so worried about the present ban but like shoes, liquids etc I expect it to grow covering everywhere in a years time

only 2 worth getting if you want a solid base non vibrating . Feisol Tt 15 Table Tripod Mini Tripod Carbon or if money no object the RRS one
VICTORINOX, Swiss Army camera strap. Very strong, very well made, does not slip of your shoulder fabulous quality metal fittings made to last several lifetimes. The central section is neoprene and shaped to fit around your neck or shoulder. It has a slight stretch seems to reduce the weight I carry the same lens on a D800 easy all day with this strap. I have been through many straps canvas, nylon, neoprene Usualy way too much stretch), leather and yes the Nikon rubbish one that shouts steal me. This is by far the best, and it fits on the camera makers strap fixings where camera straps should be attached not the tripod screw . The other option is a cordy paracord wrist strap, strong enough to support all if me self tightens on your wrist, but quick to remove
I purchase fast lenes but use all available apertures dependent on the result I want and available lighting.
I doubt anyone only uses any lens at its widest aperture, they are just way more adaptable that small aperture lenses, and usually far better quality at all settings
go with lighter and you will be wishing you had the proper gear with you every time you see a fantastic view which you will many many times
