Had to laugh when I read that. After 20 years using various types of memory cards, probably more than a hundred or more cards total and millions of images. In all that time with all those different cards I've had exactly two cards fail... Both within the past two years: one a CompactFlash UDMA 7 800X and the other SDHC UHS-1 1000X ... both were from major manufacturers that have been mentioned and both failed right from new or after the very first use. So, exactly the opposite of your experiences. But I completely agree that it's best to stick with some of the best known brands (and always test any new card before going out to shoot with it).
OP, I'm pretty sure the Canon 80D is UHS-1 capable... So buying any faster than that won't help, but also won't hurt performance (i.e., UHS-2 or UHS-3 memory cards will run at UHS-1 speeds in the camera). Faster than UHS-1 will likely cost more, though it might offer some "future-proofing" if you every upgrade to a "90D" that's "UHS-4" capable.
