For lightweight travel I use a Fuji x-e3 I purchased used at mpb with an 18-55mm lens. I also use the 50-230 tele which is a great lens.

I recently just bought this laptop... I use it with an external monitor when needed. It has plenty of memory, a fast ssd drive and has most any port needed. If you need more then just buy a hub. This is well inside of your budget.

I've been using exposure x6 and really like it. The latest release just came out (x7).

Try the free trial and watch the tutorials. The UI is similar to LR.

The camera you have is an amazing tool. I own the R6 and the focusing system with face and eye recognition alone make these cameras worth the purchase alone. Not to mention the speed of the camera. Don't let the features overwhelm you. Use your quick menu to adjust your settings. Depending on what I'm shooting I use either the shutter or aperture priority mostly. If I want consistent exposure then I'll shoot in manual mode. That's all there is to it. There are also many youtube videos from professionals that go through setting up the configuration of your camera.

John Greengo is an instructor on Creativelive.com and has many classes available. But he's decided to publish his courses on his own website and has just released a course specifically for the R5. His first 3 lessons are free.

He is the best instructor I've ever experienced in my opinion. His approach will put you at ease as he simplifies everything he teaches. Check out the link below. This course is well worth the price. You will not be disappointed.

For run and gun shooting of events then you should use TTL on your flash and set your camera on manual as according to this video. I followed this years ago and it hasn't failed me yet.

Basically you have two exposures you are setting the camera and flash for, the ambient light and the flash exposure. The link below and the links included in that video will help you understand. This applies to both on and off camera flash. Good luck and keep shooting. Manual mode will give you the most consistency while you learn this lesson.
