Silverfast and Vuescan are both very popular, and each has passionate advocates. I've tried both, and use Vuescan regularly. I prefer it to the Epson basic software.
I'm not sure of the current OS differences, but it used to be there were slight differences in how Windows, Mac, and Linux systems sorted file names by default. For example, if one has more than 9 files, you need a leading zero to be sure of the sorting being consistent. Likewise for more than 99, use 001, 002, ... 010, 011, 012. Don't forget to use an additional zero if you have more than 999 files.
Vuescan. It will let you do more things than the manufacturer's software in many cases, and it will let you use almost any scanner ever made on the newest OS.
Look for VueScan by hamrick.com . You should be able to use your old scanner on new operating systems, and it probably will have more functions available.
I have used shootShifter on the Mac for years. It does exactly what you want and is available either from the developer or the Mac app store. My version is 5 years old, and the new one is supposedly even better.
