You're lucky. The SB-800 is the most powerful speedlight that Nikon has yet manufactured, although the menu system is more "funky" than the later flashes (900, 500, 5000, etc.).

Also, it's "lightroom" counterpart DARKTABLE was just upgraded to version 3.4.n just a few short weeks ago, with many, many improvements, both in the UI and in functionality.

All of the original (AF) lenses that have the (old) "screwdriver" type of AF will NOT autofocus with the FTZ adsapter.

Again, your kit lens is fine, but you might be interested in a more versatile lens. You might look at any of the DX VR-enabled lenses like 18-105mm, or 18-140mm, or 18-200mm. They are all much the same in sharpness, some more expensive than others, some more rugged than others.

One way to hold down costs on new(er) equipment is to shop used. Online companies like KEH.com and MPB.com specialize in used equipment. Everything mentioned above has been out for 1+ years and there should be plenty of options in the used market.

In addition to the 'where to focus' comments above, also consider moving your AF point within the camera to that specific place to focus, if applicable. That is, don't just use a center point focused first someplace and then moved. Rather, learn the camera controls and the finger feel that let you quickly move the AF point to an off-center position that is where the camera should be focused.

Also look at Amazon, Robert's (usedphotopro.com); there are many, many sites that specialize, including a whole bunch in Japan (be sure to look at their ratings though, should be 99+). I have dealt with some of the Japanese sites and NEVER got burned by them; usually a bit cheeper than here in the US, but downside is the delivery takes longer.

I would choose the 7200, as then you'll be able to use (almost) any of the older lenses that do not have an internal motor (even ones with the "screw driver" AF combination).
