A wonderful tasty soup! The French eat this soup chilled, it's very tasty. I'LL be making more this winter.
I used 3 med Golden Yellow Potatoes, cut closely to the same size and cooked in a qt of Chicken Stock. Add two Leeks washed really well! One med Onion roughly chopped. Season pot well with the following.
Orgeno, Sweet Basil, Hot Cayenne Pepper Flakes (just a sprinkle), Rosemary, 3 Smashed Garlic Cloves. Also, add any spice you love, include one Knorrs Chicken Stock Cube!
Bring to a boil then lower to a simmer, cook 1/2 hour. Now it's time for your hand blender. Use your hand blender on high til mixture is smooth as can be! I added about 6 pieces of golden delicious potatoes on top soup with a sprinkle of Italian Parsley. Taste very good hot or cold!

This is another fine and tasty recipe baked, EGGPLANT! To start with observe photo 1 over all. Cut eggplant in half length wise as shown. Next, cut inside around edges 1/4". Next, cut into the eggplant 3 times as shown, lengthwise.
Now turn eggplant cut into little squares opposite length ones made. Season with ground cloves, and garlic power and any spices that you Love! Heat oven 400º cook 1/2 hour.
In a heated cast iron frying pan, brown 1-lb ground beef on med high. While meat is browing chop one med onion, one celery stock, 1-small red pepper. Season heavy with: oregano, sweet basil, rosemary, a sprinkle of red cayenne pepper flakes.
Now that the eggplant is cooled, scoop it out, add to veggies & stir well. Now scope and fill empty eggplant shells, add a tomato to end of each eggplant! Remember, use the spices that Love. Add to oven 375º 1/2 hr.
This is a tasty fine dinner, something different, you'll LOVE IT! AP

I adapted that one for use with my venison. My ex used to make them with onions, bacon and seasonings. More like a side dish. If you ever try making a 12-15 bean soup, add a handful of lentils. They'll cooked down to nothing while the other beans are more solid. Kinda like a thickener. I've even thrown them in chili for that very reason. So many ways to use them.
I got an Insta-Pot for Xmas last year. Been trying to adapt all of my bean/legume recipes. Literally half the time. Can make them after work. Not just the weekends. It's a work in progress.

Very, very, tasty Lentils! This Lentil recipe is easy to prepare. Cut one med Onion into quarters. Cut five med carrots pealed, and two celery stocks roughly cut into chunkily pieces. Cook all veggies in pot with one 14oz can of Chicken stock.
Add the following seasons to veggies: a sprinkle of Oregino, Sweet Basil, red Cayenne Pepper Flakes, Rosemary, Italian Season, with 3 Garlic cloves smashed, and 3 Bay Leaves!
Cook Carrots first, about 12-15min. Next add 1 28oz can of Pastene crushed Tomato sauce, with 2 28oz cans of spring water.
Bring to a boil, add one bag of Goya Lentils and simmer on med-low covered for at least an hour and 15min or longer. Lentils very, very, tasty and are high in protein. Very Tasty, you'll LOVE them! AP
