HDR stands for High Dynamic Range which a way of saying your image contains more information than is achievable in a single exposure. Typically, HDR is achieved by capturing three or more different exposures of the same scene at the same time and combining all of them to create a single image with more information. This than can be manipulated in post with more latitude than would be available in a single exposure. Hope this helps.
You can also get one lens adjusted for the viewfinder and another for distance and use your eyes selectively while shooting.
