I don't dry it ,my dad and his dad. My gramps freeze it if they want to keep some ,but in Norway years ago there was no home freezers
They had to dry it if they wanted to keep it , it freezer like any other fish , you can freeze the cod fresh then thaw out and and then
Add the Lye and water , but you have to salt it heavy for at least two weeks to make it , even if you get it fresh you have to salt it . We
Got the fish in sep .Then salted it down and made the lutafisk in Christmas time , froze enough to have it about five more times ,
Then in sep we got more fish and did it again every year ,keep making the sword fish dish ,if you can , the gray cod are almost gone
Back east, and one time you could use them for surf boards , there was millions of tons , they fished themselves out of house and boat

Its very simple if you brake it down : gut fish , use head for soup base , heavily rock salt on cleaned fish for a month in a plastic food bucket
Take out of salt as much as you want to eat ,cut fish in big chunks , hope you left skin on , put in a big bowel or a ice cream bucket then
Fill with fresh water change water every couple hours .I just leave under the tap all night and all next day on a slow trickle of water ,
When all the salt is out ,put a gallon of water in a bucket , put some water in a pan heat it then take two table spoons of LYE dissolve in
The water then add it to your gallon of cold water put your salt free fish in the Lye water and in about three days you will have lutafisk
Stir it every day ,you can tell when it's done , enough take it out put it in some water with salt and boil it for ten or fifteen min , eat it with
Melted butter potatoes, flat bread ,green peas
