I miss this dish haven't had Swordfish for quite awhile. Walking in my food store the fish area I found a small package of Swordfish and in my wagon it went! Photo 1 shows my swordfish dinner with mixed veggies! Fish was cooked in my cast-iron pan fried. Fish was seasoned on one side at counter and added to pan using coconut oil. Heat was set med to high watching carefully!
Top of fish was then seasoned. When fish was ready browning, I turned fish to complete! DO NOT EVEN OVERCOOK!!!
I should of mentioned Photo 4 first. The mixed veggies used were: one small zucchini, 1/2 med red onion roughly cut, 1/2 red pepper roughly cut, one med carrot julienne cut, mushrooms roughly cut, small red potatoe roughly cut with skin, placed in foil well seasoned with dribbled olive oil all over with three smashed garlic cloves.
Foil w/veggies placed in my pre heated 375º toaster oven 30 minutes door to oven not opened. Swordfish dinner with a glass Merlot was very enjoyable and tasty! AP

The key to healthy eating, as we all know, is a diet focused on lean protein, healthy oil and lots of good vegetables. This dish, like all your others, shows how to combine all of this into a healthy dinner. As I’ve said before, AP, I’m now incorporating more lean protein and vegetables into my own cooking because of your delicious recipes.
I know you’d like to encourage more people to try food photography, AP, but I think your true mission is to show people how a healthy recipe can produce a delicious dinner. I hope you never stop. You have a real talent for it.

Nice to see that you used capers and lemon. It is a great combination.
I often use it when making sauteed chicken.
I should never look at photos like this before i have breakfast lol. Wonderful presented images.
