PS does not retain the edit history, but it is possible to export the edit steps as a text file. Edit -> preferences -> history log (using PS CC).

My thought exactly, more universal
I use PS Elements and save my product as PSDs in version sets with their original. If you do further edits with a program that can't access PSD files then you could copy them out to another folder as TIFFs to retain as much data as possible. Some printing services prefer to work with TIFFs too.
Will all/ any of these formats be be retrievable in 10-20 years? Slight subject change, sorry.

10-20 years most likely
50-100 years maybe not
The jpeg format dates from the late 80s or early 90s so it's around 30 years old now and still used pretty widely.

PS has a large file format, .psb. Not sure how large it can go.
Well, quick Google reveals 300K x 300K pixels. One commenter had files > 60GB.
When I'm still working on an image, but need to close it temporarily, I save as a PSD if it has layers or as a TIFF if it doesn't.
Finished images I usually save as JPEGs. I don't save many of those TIFFs or PSDs after an image is finished, unless by special request from a client or other unusual purpose. I can always create another TIFF, PSD or JPEG from the RAW file, if needed. I keep my RAWs perpetually.
Exceptions are film scans, where the "originals" are TIFFs and those I save. I suppose I could always go back and re-scan the film, if needed. But that's time consuming. So I keep the film scan TiFF "originals", same as my digital RAW files.

A .tif or .jpg can be easily recreated from the raw file. The .psd, however, is going to depend on the actions you performed in PS. Since PS doesn't save the history you will have to remember what you did. It is possible to save the PS history as a text file but I've never tried reproducing an edit from that.
