As much as the B&W is very dramatic, I lean towards the color just because of the canyon itself. Either want, you have captured two great images.
I like the color, I lived near the Canyon for 23 years and saw it in all kinds of light. Summer, winter, rain, snow, overcast, bright sun, from 4x4 roads most people don't even know about. It was always colorful, even when snow covered parts of it. So color is real, black and white is art. We all have the choice to chose what we like.
I'm so NOT the person to answer anything about PP work, but I'll put in my 2-cents' worth. Not sure why you did an HDR on this image, as most pictures of the Canyon do not require that. I think I would have done the conversion to B&W on a single image instead of on the HDR, as they tend to be quite contrasty. In the B&W you're presented, I think I'd tone down the contrast a bit by bringing up the blacks a tad.
I like them both for different reasons. Both demonstrate wonderful light and dark tones. The sky and mountains render the sky, light and shadows more dramatically.
I can define the rock formations better in b&w.
I like both, but the HDR artifacts are more noticeable to me in the color. The detail and the lighting in the B&W have more impact to me.

The sky can be very saturated at 7000 plus feet. The north rim is about 8000 feet and I think the photo is taken to the north west.
Just a note about the sky...people who don't live in the West (and even some who do) can't believe just how blue our skies can be. This would be a pretty normal at certain times of the year.
Thanks everyone for all the suggestions and your kind words. I take all feedback seriously and will try some of your suggestions. As for the sky, I actually desaturated it somewhat. Lots of UV at 7000 feet.
