As an old computer guy (since 1965) I always make a copy of any file on a separate drive before editing. With today's inexpensive, and very large portable USB3 drives, this is now a very practical way to protect your valuable data (images.)
A program may not destroy original files, unless some hardware or software problem occurs while running that program.
For $100-$150 you get really inexpensive protection.
We should have a backup copy of anything valuable before working on it.

I would anyway. And if using layers, as long as you don't collapse the layers (This is in PSE) they are still editable. However the question was if a program in non-destructive. If you are using Save As and create a new file, the original is not destroyed or changed no matter what the program.
