I spent an entire week based out of Sedona in 2012 and could have used another one at least. Montezuma's Castle is a 'must see' and the Tuzigoot ruins (among several others) are just awesome.
Have a good time and don't mind the rest of us, we'll just be sitting here jealous of you ... :)

I will have about 5 days. I figure I can comfortably shoot within a couple hours of Prescott and not feel like I spent my whole time driving, as the drive from Sacramento, CA is a fairly long one.
Thanks to all of you for helping to narrow this down a bit. I am beginning the research with your info later today.
If you are willing to take the drive,The Columbia Gorge Scenic HWY 30 will have the highest concentration of waterfalls you can find in Oregon.Some are next to the road,others a short hike.

I spent 2 days hiking Silver Falls sate park shooting 13 falls. I hike and shoot the Columbia Gorge 2 or more times a month. The photo ops in both places are incredible. Here is one of the falls located in Silver Falls State Park.

Most of the waterfalls I would recommend in AZ involve hiking. Is that part of your agenda, or do you want easy access from your vehicle? Sedona, as others have mentioned, is rich with opportunities. If you're there, drive up Oak Creek canyon to the West Fork. Easy access and well worth it.
Even right in Prescott you can have fun exploring Granite Dells with the interesting boulder formations.
If you want a more adventurous day trip, hike to Fossil Creek, near Payson. It's a commitment, though, between the drive and the hike.
If you head out west of Prescott, it's a great drive through Skull Valley and Yarnell or Bagdad. Connect to hwy 93, go north a while and you'll be in the Joshua Tree forest.

Just north of Flagstaff at Wupatki Nat'l Monument is one of the largest collection of ruins in the US. Literally thousands. Most still to be excavated.
I agree with several others that Sedona, Az. is spectacular.

In Sedona go to the Red Rock Coconino Nat;l Forest Ranger station right on the main drag. There are Jeep tours that cater to photographers and are reasonable in price.
Most of the best waterfalls in Oregon are inland as Honeyman is on the coast. There are some great places for photography on the coast. If waterfalls are all you're interested in you need to change your itinerary. If you are just interested in some great photo opportunities there are thousands within 2 hours of Honeyman State Park.
