There are actually two different skylines in NYC. One is in lower Manhattan and is accessible from Liberty State Park. The much larger and more iconic skyline, is in midtown Manhattan. You can't get good shots of it from Liberty State Park. For that, Weehawken is the best place to go. A very wide angle lens or the ability to capture multiple images for panoramas should be considered.
J Owen Grundy Park & Promenade, Jersey City, NJ at the end of Montgomery. Go west one block & North one block & there is parking if you are driving (top left of photo) . If staying in the city, the ferry shoots over to Jersey City.
You might want to shoot from Brooklyn side also looking at the lower end of Manhatten with plenty of waterside parks near the Brooklyn & Manhatten Bridges. See photo & zoom in. I'm not on Instagram but you probably can find some great shots that could help you make a decision. Have fun, Tom
