On my MacBook Pro, I use the Apple app 'Photos' to transfer photos from our iPhones as well as my cameras, and the app automatically converts them to jpeg format. However, if I text an image to my MacBook directly from the iPhone, they do indeed come in as HEIC format. In the few cases where I do end-up with an HEIC image, I just open it in PhotoShop and do a 'Save As'.
That being said, you can turn this feature OFF on you iPhone. Just go to you Settings app, select 'Camera', then 'Formats' and select the 'Most Compatible' option, which will change the default format back to JPEG. However, if wish to shoot 4K video at 60fps on you iPhone, you need to keep the 'High Efficiency' option toggled ON.
I've taken the same picture with cell and camera and compared them. I'll stick with my camera.

My d500 has a 128g xqd card and a 32g card in it. Usually bring extra 32g cards with me on trips. When I get home I download them on 2 data hard drives (each 1 terabyte) on the computer. I also have a backup drive of the c: and a removable backup data drive stored off site. I have learned my lessons the hard way when I have had c: drives go down, but have always had a c: backup. I have never lost data yet...

On my Canon full frame DSL’s I use 128mg for both slots. I only shoot raw.
On my Sony RX 100’s I use 64mg only shoot raw.
For Vacations or big, shoots, I take extra cards. Video eats up lot of storage compared to stills. Most cards are Sandisk. Lexar is also very good.

It's hard to buy smaller than 16 GB nowadays. I have one 8 GB that just keeps on tickin'...3 16s and a lonely 32 that doesn't get out much. A good day for me photographically, is 400 exposures, and it is a while before I get around to editing/deleting. If I could find reliable 8 GB, I'd buy a few.

WOW, no 8GB Sandisk at B&H, only one 16GB Sandisk micro with an adapter.
Glad I have an assortment of 10+ 8s and 16s, I can't use 32s in my camera.

To set your Apple devices to take photos in JPEG/JPG instead of HEIC:
1) Go to Settings
2) Tap Camera
3) Tap Formats
4) Tap Most Compatible
Sync uploads the photos as they are saved on the device. With the release of iOS 11, Apple replaced JPEG with a new image format called HEIC.
What is HEIC?
HEIC is the file format name Apple has chosen for the new HEIF (High Efficiency Image Format) Standard. Using advanced and modern compression methods, it allows photos to be created in smaller file sizes while retaining a higher image quality compared to JPEG/JPG.
This new file type, however, may not be compatible with all devices. Even earlier versions of OS X (pre-High Sierra) will not be able to open HEIC files by itself.
* I don't have an iphone. In fact, I don't even have a smartphone.

In my Fuji X-T4 I have a Kodak 256Gb UHS-II I use for photos, I shoot jpg's. In the other slot I use a Lexar Pro 128Gb UHS-II for videos. Most times I will upload the photos or videos I take that day, I keep them in folders for the date and sometimes add a brief description of what I took photos of. I installed a 2Tb SSD on my laptop, it came with a 1Tb SSD to give me 3Tb. I just replaced the 2Tb SSD with a 4Tb SSD. (Dell, claims my Vostro 7510 won't support 4Tb, mine works fine. I am disappointed with Dell anyway) I usually keep the photos and videos on the SD card, once in a while I will do a mass dump for the entire card and store them on a 5Tb portable HDD. I am an amatuer and mostly shoot for myself. Maybe one day I will be discovered!! hehehehehe :D Take care, happy shooting!!

I keep my photos in folders by the date too, and I also add a brief description of the photos. It keeps them in a very tidy order and I can find anything very quickly, including when I have to pull out a different USB HD to get an old photo for some reason.
When I am away from home for multiple days I make one folder for the trip (for example, I might call it something like '2022_08_22-30_holiday_in USA') and then I create sub-folders for each day, and also separate folders for all the different places for each day, for that holiday.
For example, here are the names of some of my folders:
(Note that I always start with the year, then the month, and then the day of the month, and followed by a short description (a description that means something to me), and also note that I use underscores to separate the spaces. This latter point is a computer programming hangover that I have stuck with for everything that I do on a computer. It works best no matter what platform, so I always do it.
