When I set up my Mac, I drag aliases from the Applications folder to the dock for:

All the others either come pre-installed with MacOS, or they are free downloads from the App Store.
I use all of these at one time or another, often enough to keep them in the dock. My other apps are in the Applications folder and Utilities folder. Most of the Apple apps have versions that run on the iPad and iPhone. Most of the Apple apps that generate files can keep them locally AND/OR on iCloud server, so you can access them from all your devices.
