Beautiful, all cooked together? or Chorizo to flavor EVOO then Roasted Potatoes and Octopus last? I have never cooked Octopus just squid, overcooking makes it tough. Thanks for posting.

All are very nice and I agree with others #3 is my favorite. Also jealous you got to eat it as it looks scrumptious.

Sous Vide is the best way to cook octopus. I followed Thomas Keller recipe, 140 degrees for six hours.

Agree with others and like the close crop of #3. I always like octopus when charred. Do you sear it after it is cooked?
