I'd also suggest getting a copy of the book Photographing the Southwest: Volume 2 - Arizona by Laurant Martres. This series of three books are pretty well known by those who like to travel to and photograph the Southwest. It is available as a Kindle download you can use on your iPad with the Kindle iPad app as well.

Depends on how you're traveling but Tonto NM NE of Phx has spectacular cliffs, indian ruins and Lake Roosevelt on a driving daytrip. Red Rock country near Sedona is doable on a day trip as well. Organpipe Cactus NM is Beautiful but a bit long for a daytrip if you want to catch some sunset pix. There are just so many geological formations in AZ that are difficult to do on a single day trip from Phx
Trainlee, only a suggestion, but look at lots of back issues of "Arizona Highways", may have some good stuff. It is one of the premier photo mags in the world. Have fun
If you can get to Sedona do it. The red rock mountains there are many and majestic.
There is a Verde Valley railroad that is quite photogenic, however I dont know if it is in operation in the winter. IN Phoenix there is the Botanical Garden, the Zoo. Grab several back issues of Arizona Highways, you won't run out of ideas. Northern Arizona has a lot of photographic opportunities, ritht now though Flagstaff has a lot of snow.

For easy access to "dramatic geology", try the rugged Superstition mountains, about an hour east of Phoenix. The windy road to Canyon Lake and Tortilla Flat is a fun drive. (Attached is a snapshot.) I agree with some of the other suggestions posted, too. The Grand Canyon Railway is open all year, but I don't know how many photo ops there are unless you actually ride the train.
