I learned a long time ago that the best price/performance was one model year old. I bought a nice D810 when all the folks were clamoring to buy the just released D850. I've been happy as a clam with the D810 and would recommend it to anyone. Checking out the sold items on eBay there are a lot of low shutter count bodies that have sold for under $1000.
I am a long time Nikon user and know what you are going through. My advice would be to stretch a little and get the 850. I have one which did a great job on a safari in Africa. It produces great pictures and the extra chip size give more flexibility for cropping action shots. The total tech package is great and significantly better than the 810 that I owned and traded for the 850. I do have friends who like the 750.
For the shooting you do I would go mirrorless and get the FTZ adapter to use your F mount glass. I shoot a Z7 and love it. If you’re shooting in low light you can’t beat the Z6.

Many people here are suggesting cameras because they know about them and know that they are good.
Like suggesting a D750 or D780 to you for your use case seems a little strange to me - even though both those cameras are great. I have a D750 - although I use my Z6 more and more these days and am sure that with the introduction of the Z6S and Z7S, I probably will never use my D750 again. I don't say that lightly - I have been shooting SLR's and then DSLR's for over 30 years.
It seems to me if your primary use of the camera is landscape that you should get a camera with more megapixels - landscape can actually benefit from this for larger blow ups and/or if you decide to crop and then blow up the shot. I see no reason why you would stick with a camera that has equivalent MP and more or less equivalent sensor like the D750 or Ds780 - both excellent cameras but they will not yield results that are appreciably better than your D600 did for landscape. If you were a portrait shooter or wedding/event shooter then I would say definitely go with the D780 and/or the D750 if you can't afford the D780, but you are a landscape photographer and for you high MP actually does matter!
Also, your reason for not going mirrorless because you have lots of F mount lenses should also be reexamined. With the FTZ adaptor you can use these lenses many with full functionality, and since you are into landscape you are likely doing most of your work with manual focus which means any deficiency in the mirrorless AF system is irrelevant. Likewise, if you are using older screw drive lenses you will just manual focus them anyway so the fact that you can't autofocus with them on the FTZ becomes largely irrelevant.
Furthermore, if you are manual focusing, the mirrorless camera gives you advantages over the DSLR - at least through the viewfinder - with focus peaking inside the viewfinder and the ability to zoom into the shot 1:1 before even taking the photo to be sure things are sharp.
Of course with landscape you will usually be at f/11 or f/16 for daytime work and with wide lenses your DOF should be very large - using hyper-focal techniques you could literally have everything from a few feet away to infinity in focus further eliminating your need for fast AF systems.
By the way, the AF system in the Z cameras is now pretty competent after firmware 3.0 - the only area that still lacks is fast action tracking and Eye detect AF both of which you do not need as a landscape photographer. Thus, you might consider the Z7 with its 45.7 MP sensor (the same as the D850) but with so many other extras that the D850 doesn't provide as well. Oh, and the weather sealing is just as good according to Nikon.
Whatever you do, do yourself the favor of going with a D800-D850 (something in the 800 series 36-45.7MP) or a Z7 45.7MP. Going with any 24 MP camera - even the newest one like a D780 - will barely be an upgrade for your particular use case and the output will not be noticeably better at all.
Just my thoughts.

I'm personally very happy with the D800, I'm told that with the later models you have to become more concerned about Moire.
