I compliment you on your effort but would suggest that is she has DSLRs, she knows photography and would be the best one to make this choice. I have 2 banjos and a keyboard because a dear relative thought they would help me.
Paul, I got a Canon G9 to carry with me when I didn’t want to lug around a larger camera (there are several available now on KEH). It is a nice compact size and makes very nice images. I do believe Canon has some newer versions of this camera (G16, I think) that have eye-level viewfinders. The only drawback that could be mentioned is the limited zoom range (about 4x) and, for me anyway, the short end of the lens could be a bit wider angle of view.

My wife has not given up her Lumix LX3 so the Lumix LF1 I purchased for her is available. Very compact with a usable viewfinder. The Leica C (Typ112) version went for $1200, the Lumix is much more affordable. PM me if you're interested.

Go to a store that carries a wide variety of cameras. Look for the size and price range you want. Buy it. Go home. Take pictures. This is not a complicated decision where thousand of dollars are involved.
I like the idea of buying an old Olympus mirrorless camera or perhaps a Panasonic mirrorless with their small size and intechangeable lenses. The kit lens does a great job and it is reasonably priced in the second hand market.
Don't know whether you can score with my pocket point & shoot: Canon PowerShot A1400. 5.0 - 25.0 mm, f2.8 - 6.9, optical viewfinder, 3.5" wide by 2.25" high. Got mine as a refurb from Canon for under $100 several years ago. It does pretty good images. Uses ordinary AA batteries.
You both can look for flat cameras fitting to a pocket like several offered by Panasonic.
Leica zoom from 24mm to 720mm or better, Electronic view finder, LCD screen and RAW.
No matter, what you already have, you might be amazed, how convenient such a little camera is?
And you will be borrowing your wife's little marvel.
Go to a camera store and try them all.
Unfortunately, not all listed have viewfinders. The Panasonic DC-ZS70 does and is currently on sale for $347.99 new. The DMC-ZS60 is available used from B&H for $249.95

See if you can find a used Olympus XZ-1 or XZ-2 with a VF-2 or VF-3 attachable viewfinder. This is what my wife uses when she wants more than the cellphone and what I use when I don't carry my OM-D.

They are a bit large for pocket compatibility. A couple of months ago, I left my SX-50 at my condo 300 miles away and needed that capability at home. I searched and found that the Nikon A900 (it is a little over your budget) IS a portable camera that has a great zoom lens range and produces sharp images. I retrieved the SX-50 on my last trip but I am still using the A900 more because of its portability. Check it out.
