Arches NP, Canyon Land NP and Dead Horse State park. I've been there a total of 6 weeks and still much more to see.

The entire area is full of great views. I agree with the above, but if time permits also try Capitol Reef and Goblin Valley a few hours drive from Moab.

The National and State Parks are a must, but if she likes street photography, Moab has great opportunities for that type of photography as well. Main thing, have a blast.

How long will you be on the area....arches national park, canyonlands, canyons of the ancients, reservations in the area.
A little more south west, around page az, the are the slot canyons, grand staircase, glen canyon, horseshoe bend, bryce canyon....if you have time, north rim of grand canyon.
Wow!!! So much in that area. I love that area....2 weeks minimum, a month would be better....just the moab area, maybe a week.
Have a great time....you will love it.....kanab is good too....i used two lenses in that area, 18-200mm between them.

rodpark 2 and Kiron Kid have given you good advice. Try to shoot while everyone else is having breakfast and there is magic light. Hope you don't get hit by a dust storm; if you do, enjoy your time in town. If the moon is right, you might try to paint with moon light. If you have good batteries and quality memory cards, you'll never regret your trip.

Dogs are not allowed on the trails in Arches NP.
One couple had a German Shepherd at the Double Arch and it lounged at me.
Thankfully, the man had good hold on the leash! It terrified me.
I jumped back so much that I could have fallen off the trail.
If she can't hike to Delicate Arch there are a couple of view points. One is a hike up (by the time we did that we may have well have hiked to the arch) and the other is a short walk trail.
I think the Visitor Center closes at 4:00 so go there first. :)
We enjoy eating at the Moab Diner.
And....the Comfort Inn there has THE softest sheets I've ever felt!! It was heaven. :) :)

If you can provide more information --duration of trip, means of travel (POV, rental, 2wd, 4wd), ability/willingness to hike, what sort of photography is preferred, etc.-- it would be possible to provide more useful tips. Unlike some others, I would suggest not planning on driving to places 2-300 miles away from Moab for a visit of anything under a couple of weeks or more.

From an 'outsiders' point of view, I thought Dead Horse Park was under rated. I think that's the one with a decent cafe at the end.

Enjoy your visit. All of the suggestions above are worthwhile. The Moab area is one of the most breathtaking that I've ever been to.

Take a polarizer.
Explore all over, take a real paper map and look at it.
There is just so much to see in the area.

Dead Horse Point state Park is like a mini Grand Canyon and quite spectacular. It was recommended to me by an old guy guy in a diner who saw my camera and told me about it. Add it to your list of the fabulous National Parks in the area.
