JF - Coupe, I did not miss your response, I just did not answer in time! You said the correct answer concerning this tasty dinner recipe! Many people cook fish dinners too long, or might I say, TOO MUCH! Then, they respond, IT'S TOO RUBBERY, TOO CHEWY! Of course it is, it's way too long cooking . . . !
Many foods can be eaten RAW, never mind a cooking time at all! Your mention of Calamata, and Zucchini, are my favorite, their in my fridge all the time, I LOVE them, they're very versital indeed! I always seem to forget, a glass of wine with my dinner recipes! Maybe it's because I have a couple before or during cooking, must be why the dinners look so good!
