Canon 7d my ii vs canon 80 d

I shoot the same things you do. I tried the 7D Mark II twice and was not happy with the results. I was used to image quality of my 5D Mark III and the first time I got some low light shots with the 7D Mark III on a couple Great Blue Herons fighting they turned out totally useless. They would have been fantastic with the 5D so I took it back and got my money back. About a year later I still wanted a crop sensor for the extra reach so I tried another 7D Mark II thinking maybe I just got a bad one the first time since everyone talks about how great it is. Same crap, very noisy in low light. Then the 80D came out and I got it. In my opinion the 80D is way better than the 7D II and I am happy with the results. To me 10 FPS was too fast anyway and I set the 7D to 7 FPS anyway and the 80D already shoot 7 FPS and the image quality is much better. Just my experience for what it's worth.

Here is an image of a great white Heron taken in fairly low light in a museum courtyard. He had just landed and was looking for dinner from the fish pond. Shot with my Canon 7D Mark II during late afternoon with cloud cover. He wasn't moving much while keeping an eye on me (he was only around 10 feet away), so I was able to shoot him at 1/50 which allowed me to keep the ISO at 100. I can shoot virtually noise free to ISO 3200 and at ISO 6400 a little judicious noise reduction in DXO PhotoLab cleans things up completely.

That is a very good image and I have seen many good images taken with the 7D Mark II which is why I gave it a try twice. I used to have the 7D Mark I and got some great images with it but I guess I got spoiled with the image quality of first, the 6D then the 5D III and now the 5D IV but still wanted the reach of the crop sensor. To me the 80D has better dynamic range, better low light performance and better resolution. I don't care about the extra 3FPS the 7D has, I shot it at 7 FPS anyway. Without a doubt the 7D is a better made camera but the image quality of the 80D is without a doubt better IMO and that is what counts to me. When the 7D III comes out I'm pretty sure it will be even better with the professional body and the new sensor technology.

You will get no argument from me about the 80D. It's a terrific camera at a great price point. One of the features that is important to me is the weather proofing of the 7D Mark II which is superb. I also much prefer the handling and layout of the controls. For me these other features are as important as the better sensor is to you.
