As someone here once said, the one you have with you...

That said, my personal choice is not a prime, but a standard zoom (mine is 16-70 on an APS-C). In cities, especially with narrow streets, I sometimes take a wide angle zoom (10-18), which is particularly good for capturing buildings and, in a pinch (if it is the only one I have with me), works reasonably well for a lot of street shots.

I'll leave it to others to pick their favorite primes.

Depends.
What what size is the sensor in your camera?
What do you like to shoot?

We need more information like what kind of camera you have, what it is you like to shoot before we answer you question?

Depending what I am expecting, I will walk around with a 24-70, 80-200, 150-600. or even a 14-24, but that lens doesn't get used much. If I am going to walk around at a zoo, nature area with birds and wildlife I will pick a long lens to walk around with, and so on. . .

It depends on what you generally photograph as you walk around. For general work, a 50mm on a full frame camera or the equivalent angle of view 35mm lens on crop frame camera is a good prime to have.

Nick, 50MM for FX and 35MM for DX sensor. Kay words for me was PRIME Lens. A zoom is not a prime lens.

50mm lens is about as close to the humans eye perspective.

Any lens that qualifies as normal focal length for the particular format you are shooting.

The lens I use most on my full frame Df is a 50mm f/1.8, I love shooting with it.

For many decades, on a FF and before zooms were any good the 50mm was the std lens. Either a 1.4 or the 1.8.
Nowadays, I only use one if the light is low.

24 mm will get you wide angle for architecture and can be used for close up work.

If it's a full frame as mine is & it's a Canon DSLR
I enjoy using the 35mm 1.4 L II
If I'm smart I'll also bring along the 24mm 1.4L II

SOME additional thoughts:
If I had much better eye sight (need for manual focus) & a hell of a lot more money:
I would use Zeiss & or Leica 35 & 24's instead of those Canon L's
