If you are interested in architecture, Seaside offers interesting cottages and homes. For a view of "old Florida," Apalachicola offers interesting architecture and some fabulous oyster bars. My favorite is Boss Oyster.

Pensacola is the home base of the US Navy Blue Angles. I don't know their schedule but many on land and sea like to watch them practice. Check if their at home. You might get lucky.

My sister-in-law just texted me this website. They visit St Marks often, www.stmarksrefuge.org and on facebook www.facebook.com/SMSVNWRS, I haven't had a chance to check either site out yet but will do so later today.
