First of all you should shoot in raw format and then to adjust the photo in adobe light room. You can easily remove shadows in adobe light room. Also to remove the dark side in front of the subject you can try to use a Flash when you realize your photo. This is my opinion, so I'd proceed.

I would move the trophy so that a: it is not tilted at an angle & b: it's lined up against the heifer's shoulder so it had a dark background to show it up more. At the moment it is getting lost in the background. Hey, nice job, though. I love how the handler is so proud with his ear to ear grin.
As suggested at the time of shooting, a fill flash would be ideal for the cow and cowboy.
For post production, assuming you have Lightroom, adjust the exposure, contrast and clarity to balance the exposure. In the Develop module, apply a gradient filter with the slider towards the blue side. I've done with with a washed out sky and have been amazed what hidden detail there is. With the JPG posted, options are limited.
Using a program like Photoshop, you can use "curves" to alter the shadow / highlights ratios. Another way would be to "select" the Bull and man and use tools to increase contrast, hues, exposure etc. to enhance that section. Then invert the selection to fix the background or highlighted areas.
